There are many other kimchi dishes that aren't made with cabbage, but this one is simpler to make and is generally more beneficial to people with type 2 diabetes.
2 cloves garlic, finely chopped, 1 teaspoon kosher salt, 2 pickling cucumbers or other small cucumbers, 2 scallions, white and light green parts only, finely chopped, 1 1/4-inch peeled and 2 tablespoons rice vinegar, 1 tablespoon Korean chile powder, 2 teaspoons sugar, and 1/2 teaspoon fish sauce
Some of the ingredients in this recipe, such as fish sauce and Korean chile powder, can only be found in Asian markets, so don't be surprised if you don't have access to them. Please try to find Korean fish sauce and avoid using substitutes such as Thai fish sauce. If you can't find Korean fish sauce, don't use any fish sauce.
To begin, cut the cucumbers in half and then crosswise into 1/8-inch-thick half-moons. Then you'd put them in a bowl and thoroughly combine them with salt.
While the cucumber is resting in the bowl, combine the ginger, vinegar, chile powder, sugar, fish sauce, and scallions in a nonreactive bowl.
After that, drain the cucumber and combine it with the vinegar mixture. Then, cover and chill for 12 to 24 hours before serving.
Mushrooms Balsamic-Roasted with Parmesan:

2 tablespoons extra-virgin olive oil, 1 teaspoon dried marjoram, 12 teaspoon ground pepper, 14 teaspoon salt, 1 pound thickly sliced mushrooms, 2 tablespoons balsamic vinegar, and 14 cup grated Parmesan cheese
Once you've gathered all of your ingredients, the first step is to preheat the oven to 450 degrees Fahrenheit.
After that, combine the marjoram, pepper, salt, and oil in a large mixing bowl. After you've finished stirring, coat the mushrooms in the liquid and place them on a baking sheet. After about 12 minutes, remove the mushrooms from the oven.
Drizzle it with vinegar after it comes out of the oven. Sprinkle with parmesan and continue to roast for about five minutes, or until the cheese is melted. When it's finished, you can serve it hot or cold.
